Easy Protein Chickpea Salad

This salad is not only effortless to make but also incredibly versatile and nutritious. Packed with hydrating properties to nourish your cells and the detoxifying benefits of cilantro, it’s a wholesome option for any time of day. Plus, it keeps well overnight, making it perfect for preparing ahead of time. I added some organic feta for some extra protein, but you can make this dish vegan by removing that.


  • 1 cucumber diced
  • 1 can (375 g) organic chickpeas, rinsed and drained
  • 1/2 cup organic feta
  • 1/2 cup of diced cherry tomatoes
  • 1/4 red onion diced
  • 1 avocado diced
  • 1/4 cup cilantro finely chopped

Easy Dressing Ingredients

  • 1 T organic olive oil
  • 1/2 tsp herbamare or salt to taste
  • juice of half a lemon


  1. Combine cucumber, chickpeas, cherry tomatoes, red onion, and avocado into a bowl. Mix well
  2. Add the feta and incorporate the dressing.
  3. Add the cilantro on top and serve.
