Cinnamon Spiced Oatmeal Souffle

Do you have a house full of guests to impress and limited time (or desire) to wake up and make breakfast?  These vegan and gluten free Cinnamon Oatmeal Souffle’s are your answer!

I admit, I’m not the biggest oatmeal fan, it wouldn’t normally be my first choice to serve guests, but this is a completely different twist with flavors reminiscent of warm spiced apple crumble and toasted nuts with vanilla.

I like to serve these in individual ramekins and present as a breakfast soufflé aka my “fancy” breakfast option that allows me to slyly serve my guests a healthy start to their day.  I don’t mention until they’re finished that the secret ingredient is a vegetable….

Cinnamon Spiced Oatmeal Souffle

Makes 1-5 inch Ramekin  

Ingredients:

1/4 cup gluten free oats

pinch of salt

½ tsp. organic vanilla powder

½ tsp. organic vanilla extract

¼ tsp. baking powder

¼ tsp. cinnamon

¼ tsp. pumpkin pie spice or nutmeg

½ medium/large zucchini, shredded

½ apple, diced

¼ cup crushed pecans or walnuts

3 drops liquid stevia (I prefer vanilla flavored)

1 T. organic applesauce

3 T unsweetened almond milk

Directions: 

Preheat the oven to 350.  Grease your individual portion size ramekin with coconut oil or grass fed butter and set aside.

In a small bowl, mix gluten free oats, salt, baking powder, vanilla powder, cinnamon, and spices. Add in zucchini, apples, and nuts and mix well. Add liquid vanilla extract, stevia, applesauce, and almond milk. Mix well and scoop mix into ramekin.

Place in oven and bake for 20 minutes until golden brown and warmed throughout.  Garnish with cinnamon, berries, or nuts of your choice.
