Gluten Free Peanut Butter and Banana Muffins

These gluten free muffins are one of the easiest recipes you could ever find.  Add everything to a blender, blend, pour, and bake.  Best enjoyed hot right out of the oven, they’re even better with a smear of grassfed butter or even a dollop more of peanut butter!


1 cup organic peanut butter

2 organic bananas

2 organic eggs

1 T. maple syrup

1 1/2  tsp. vanilla

1 tsp. Bragg’s apple cider vinegar

1/2 tsp. baking soda

1/4 cup vegan chocolate chips (optional)


Preheat oven to 400.

Place all ingredients in blender and blend until smooth, add chocolate chips if desired.  Fill lightly greased muffin tins 3/4 full of batter.

Bake at 400 for 15 minutes. (These will cook quick!)
