Some mornings just call for something light, fresh, and energizing, and this Matcha Mango Chia Pudding hits all the right notes. It’s become one of my favorite fiber-fueled breakfasts, especially in warmer months when I want something hydrating, cooling, and packed with nutrients. It could not be easier to make!
Ingredients
3 ½ cups unsweetened almond milk
¾ cup chia seeds
2 T maple syrup
2 T matcha powder
¼ tsp kosher salt
1 16-oz. bag frozen mango, thawed in bag
A handful of blueberries
Directions
1. In a large bowl, whisk together the milk, chia, maple syrup, matcha powder, and salt.
2. Let it sit for 15 minutes, stir again, and let it sit another 15 minutes until the chia seeds swell.
3. While the pudding sets, gently smash a thawed 16-oz bag of frozen mango until mostly smooth. Layer the chia pudding evenly!
