If you’ve taken a brief look at my blog, my social media, or just about anything I share, you will see I’m not much of a breakfast eater. If I have my matcha latte or my bulletproof coffee, I’m pretty good until lunch time. Until now…I discovered these oatmeal apple cinnamon bites and they make the perfect light accompaniment to my coffee or tea. I make mine with gluten free oats, fresh chunks of whole apple (skin and all) and cinnamon. Oats are an incredibly healthy whole grain, providing several vitamins and minerals along with fiber – making them a great breakfast food. Keep in mind, these bites are only sweetened with apples, so they won’t be overtly sweet (perfect for the morning).
Oatmeal Apple Cinnamon Breakfast Bites
Makes 12-15 bites
1 1/2 cups Bob’s Red Mill Gluten Free Oats
1 cup unsweetened apple sauce
2 tsp. cinnamon
1/2 green apple, cored, and small diced
1/3 cup finely chopped walnuts or pecans
Directions:
Preheat oven to 350 degrees. Line a baking sheet with parchment paper (optional, you can also grease with coconut oil).
In a medium mixing bowl add first three ingredients. Dice your apple and add your diced apple and chopped nuts. Mix well, then use an ice cream scoop or tablespoon to scoop out small balls of the “dough”. Place on your lined baking sheet, making sure they are firmly packed into small balls.
Place sheet in oven and bake for approx. 20 minutes.
