I spent months perfecting this coconut yogurt kefir recipe for a few reasons. One is that many of my clients avoid dairy and often ask for a tasty replacement. Another is that fermented foods are a big part of our overall health and including a variety of natural ferments helps to balance our gut bacteria. Fermented foods also benefit our immune system and mental health. Finally, I LOVE coconut! And what’s not to love? It is a great source of healthy fats, a fantastic source of slow-burning energy, and it’s delicious!
This simple coconut yogurt kefir makes for a perfect nutrient-dense breakfast or snack. If you want to take it up a notch, add some fresh berries, a sprinkle of hemp seeds, and/or gluten-free granola, and you have a delicious start to your day. This is a very mild fermented recipe, making it ideal for kids and adults alike.
Ingredients:
1 16-oz can full-fat coconut milk
1 Renew Life 50 or 100 Billion probiotic capsule, opened up
2 tablespoon maple syrup
1 teaspoon vanilla
2 cups Zuma Valley Coconut Meat, thawed
1 cup of berries (optional)
Directions:
In a blender, add your coconut milk, maple syrup, vanilla, coconut meat and berries. Blend until smooth. Add your probiotic capsule and blend again. Cover your jar with a cheesecloth and place it in the oven (do not turn the oven on) overnight or for about 12 hours.
Remove and give a good stir. You might need to blend again until smooth. Store in the refrigerator.
*this is a mild yogurt kefir, which is wonderful if you are sensitive to the ferment. If you prefer a stronger ferment, you can add the 100 billion probiotic capsule.
