Strawberry Protein Chia Pudding

Packed with plant-based protein, fiber, and naturally sweet strawberries, it takes just a few minutes to prep and leaves you feeling full and energized. It’s completely vegan, easy to customize, and perfect for busy mornings when you want something light yet satisfying. Whether you’re meal-prepping for the week or blending it fresh in the morning, this recipe is a delicious way to fuel your body and support your digestion from the first bite.

Ingredients

6 oz silken tofu
1/2 cup diced strawberries (extra for serving, of course!)
2-4 T organic coconut cream
2-3 T organic chia seeds
1/2 T organic honey or maple syrup (for sweetness, optional)

Directions

  1. Add the silken tofu and strawberries to a blender and blend until smooth.
  2. Add your coconut cream, starting with 2 tablespoons. Add more as you blend, until you’ve worked up to 3-4 tablespoons.
  3. Add the strawberry mixture to a jar or bowl with the chia seeds. Whisk or shake your jar to combine and remove any clumps of chia seeds.
  4. Cover the jar or bowl and place in the fridge for 1-2 hours, or until the mixture has thickened into a pudding consistency. Stir again before serving, and top with strawberries! (You can also stir in your 1/2 T of honey or maple syrup at this point if your pudding is not sweet enough)
