Mood-Boosting Salad

As you already know, the foods we consume play a significant role not only in our physical health but also in our mental well-being. This salad is a fusion of nutritious elements, with turmeric quinoa, beet sauerkraut, protein-rich chickpeas, hemp seeds, and sweet potato, all topped with a delicious tahini dressing. Together, these ingredients create a delicious and nutritious salad that not only nourishes your body but also uplifts your mood – this is my new spring fav!

Salad Ingredients

3 cups organic arugula
2 cups of turmeric quinoa (just add turmeric to the quinoa when you cook it)
1 roasted sweet potato cubed (I roasted mine in the air fryer with avocado oil, garlic and onion powder, and salt)
1 cup of shredded roasted seaweed snacks
1 can of roasted chickpeas (roasted on the pan with the sweet potato)
handful of micro greens (or sprouts) of your choice
1/2 cup of beet sauerkraut
3 T hemp seeds

Dressing Ingredients

2 T olive oil
2 T organic tahini
1 large lemon juiced
1 T Dijon mustard
1 tsp garlic powder
pinch of salt and pepper to taste (I also added Herbamare)

Directions

  1. Shake the dressing ingredients in a mason jar to combine.
  2. Combine all of the salad ingredients in a large bowl and toss with the dressing to combine.
  3. Serve, and enjoy!
