Turmeric Millet Cleanse Salad

Summer calls for refreshing and nourishing meals, and my favorite is the Cleanse Salad with Turmeric Millet and Harissa Dressing. This vibrant salad combines the anti-inflammatory benefits of turmeric with the nutty, gluten-free goodness of millet. Such a great way to detox and enjoy a healthy, satisfying meal!

Serves 4

Salad Ingredients

1 T organic Turmeric
1 1/2 cups Millet, raw
2 cups cauliflower florets
1 cup raw bits, ribboned
2 T dill, chopped
1 T Mint, chopped
1 cup Radicchio, thinly sliced
4 cups organic red gem lettuce
1/2 cup raw pecans, chopped
1/2 cup golden raisins

Harissa Vinaigrette Ingredients

1 cup cashew yogurt
1-2 cloves of garlic, minced
1 1/2 tsp harissa paste
zest and juice of once lemon
1 T pomegranate molasses
1/2 tsp maple syrup

Blend all ingredients together to emulsify. Season with salt to taste.

Directions to cook millet

  1. In a large dry saucepan, toss the raw millet over medium heat for 4-5 minutes or until it turns a rich golden brown and the grains become fragrant.
  2. After adding water, salt, and organic turmeric, give the millet a good stir. Increase the heat to high and bring the mixture to a boil for about 15 minutes.
  3. After, reduce the heat to low and continue to cook for 5 more minutes.
  4. After millet sits, fluff it with a fork.
  5. Taste and add salt if needed.

Directions for salad

  1. In a mixing bowl, toss all salad ingredients.
  2. Add dressing and mix again.
