Date Night Chocolate Truffles
Makes 2 dozen truffles
Ingredients:
16 oz raw Medjool dates, pitted
1/2 cup raw unsweetened cacao or cocoa powder
¼ cup unsweetened shredded coconut
1 tsp vanilla
Pinch of sea salt
Flavoring options: 1 tsp finely grated orange zest, vanilla paste, or instant espresso powder
Coating options (pick one):
½ cup unsweetened shredded coconut
¼ cup lightly toasted sesame seeds
½ cup chopped toasted pistachios
½ cup chopped toasted walnuts or pecans
Directions:
In a food processor, combine roughly chopped dates, cocoa powder, coconut, and salt until almost smooth. Add desired flavoring and pulse to combine.
Scoop the date puree by the tablespoonful and roll into 1” balls. Roll truffles in desired coatings to cover.
Keep truffles in an airtight container in the refrigerator. They are best enjoyed at room temperature.
These Date Night Truffles can be made 1 week ahead of time, and will last in the refrigerator for up to 2 weeks.
