These Matcha Cheesecake Dates are the perfect blend of indulgence and nourishment. Ingredients
10-12 pitted organic medjool dates
1 cup of vegan vanilla yogurt of your choice (I love the vegan Siggi’s or the Forager’s brand)
1 bag of the Lily’s vegan white chocolate chips (9 oz bag), melted
1 T organic matcha
Directions
- Cut a small slice in each date, enough to open them and stuff them with yogurt. Do not cut them all the way through, as you need the bottoms in tact to hold the yogurt.
- Stuff each date with 1-2 teaspoons of yogurt.
- Freeze the dates for at least one hour.
- Melt the white chocolate.
- Add matcha to the white chocolate until fully dissolved. I recommend sifting the matcha first to ensure there are no clumps.
- Dip each yogurt-stuffed date into the white chocolate and matcha mixture, fully covering the date.
- Line the coated dates on a sheet of parchment paper.
- Put the dates back into the freezer for 30 minutes.
- Enjoy! Store the dates in the freezer.
