I love a little bite-sized treat, and these are my new obsession—DATE CARAMELS! Made with soft dates, dark chocolate, and a sprinkle of flaky sea salt, they’re the easiest treat to whip up.
Ingredients
2 cups of pitted organic medjool dates
3 T cashew butter, almond butter, or tahini
3 T organic almond flour
1 1/2 tsp vanilla extract
pinch of salt
flaky sea salt for the topping
200 grams of your favorite dark chocolate, melted
Directions
- Soften the dates by placing them in a bowl of hot water for 5-10 minutes. This will make it easier to blend them.
- Add the dates, nut butter of your choice, almond flour, vanilla extract, and one pinch of salt to the food processor and blend until smooth.
- If the texture is really sticky at this point, add another 1-2 T of almond flour – you should be able to mold/work with the caramel without it sticking to everything, but you don’t want to add too much almond flour.
- Press the date mixture into an 8×8 square glass pan and place it in the freezer to set for 2-3 hours.
- Remove from the freezer and cut into squares in the size of your choice.
- Melt the chocolate and dip each caramel into the chocolate. Allow each piece to drip on a wire rack, and then transfer back to the pan to top with flaky sea salt.
- Chill in the fridge so that the chocolate takes its shape and enjoy!
