It’s incredibly difficult to find desserts recipes that both taste great and won’t throw you off balance. So when a few simple real-food ingredients come together to make a satisfying dessert it’s pure magic. These pops rely on the bursting flavor of in-season berries matched with the savory coconut and just a hint of sweetness. With the summer heat beginning to pick up, these icy cool treats are perfect.
Summer Berry and Coconut Milk Popsicles
Make 10 3 oz Pops
Ingredients:
⅔ cup chopped strawberries
⅔ cup blueberries
⅔ cup blackberries, cut in half
⅓ cup maple syrup
1 tablespoon lime juice
5 oz. Zuma Valley coconut cream, thawed
1 cup coconut meat, I used Zuma Valley Organic Coconut Meat
Popsicle molds
Directions:
Puree coconut meat until smooth. Set aside
Combine strawberries, blueberries, blackberries, and maple syrup in a small sauce pan. Cook over low heat, stirring regularly for 5-7 minutes. The mixture should be the consistency of a thick jam.
In blender or food processor, add coconut milk and meat and blend until just slightly chunky.
Remove fruit from heat and stir in coconut milk and meat and a tablespoon of lime juice.
Using a spoon or spatula, spoon in pureed coconut and berry mixture into the molds, mixing as you go for desired effect.
Freeze for a couple hours and enjoy!
