This edamame salad makes for the most amazing summer appetizer. I like to serve the salad on a Topseedz cracker with a piece of seaweed – this flavorful combination packs just the right punch! It is healthy, full of protein and fiber, and it can even be used for meal prep as it won’t get soggy.
Edamame is one of my all-time favorite sources of plant-based protein for several reasons. Not only is it rich in vitamins and minerals, but a cup of edamame will give you almost 19g of protein. It is so easy to add edamame to a salad or bowl like this one, and of course, it tastes great!
Dressing Ingredients
2 T Tamari
2 T Rice Wine Vinegar
2 T Organic Maple Syrup
1 T Sesame Oil
1 T Fresh Ginger (Grated)
1 Tsp Sambal Oelek
Salad Ingredients
2 cups of edamame beans (organic, unshelled, cooked)
2 cups of cucumber (diced)
1 cup of green bell pepper (diced)
4 T green onion (chopped)
1/4 cup of fresh cilantro (chopped)
3 T toasted sesame seeds
Serve with Topseedz sea salt crackers and sea salt seaweed snacks!
Directions
- Prepare dressing by placing all of the ingredients into a glass jar and giving it a good shake, shake, shake!
- Prepare the salad by placing all of the ingredients into a large bowl. Mix them well and drain any excess liquid to avoid diluting the dressing mixture in the end.
- Add the shaken dressing and stir
- Layer seaweed on top of a cracker, add a spoonful of the salad, and enjoy!
