Mighty Greens Quinoa Pizza

This pizza is not only super clean and easy to make, but it’s also a blank canvas for your favorite toppings. I’ve added my personal favorites, but feel free to get creative and make it your own. Whether you’re a vegan, gluten-free, or simply looking for a healthy, tasty meal, this quinoa pizza is the perfect choice.

Crust Ingredients

¾ cup quinoa
1/2 cup water (+ a few extra tablespoons if needed for the blender)
½ teaspoon sea salt
2 cups organic spinach
1 handful of herbs of your choice
1 tsp baking powder

Recommended Toppings

organic vegan pesto
marinated artichokes
green olives
Miyoko’s vegan mozzarella
fresh basil

Directions

  1. Add the quinoa to the 1/2 cup of hot water and allow it to soak for 15 minutes.
  2. Preheat the oven to 425 degrees.
  3. Add the spinach to the bottom of your high power blender, and then add the quinoa on top. Add the salt, remaining herbs, and baking powder into the blender and blend until a batter forms. It will look like pancake batter and it should be thick – you don’t want it to be runny on the baking sheet.
  4. Spread the batter on a sheet of parchment paper on a baking sheet.
  5. Bake the crust in the oven at 425 for 10 minutes or until firm.
  6. Top with your favorite toppings and pop back into the oven for 5-6 minutes or until the cheese is melted.
