Sweet Potato Fries with a Vegan Garlic Aioli

Welcome to your new favorite go-to recipe for any occasion — easy sweet potato fries paired with a delightful vegan garlic aioli! Whether you’re firing up the grill for a summer cookout, sitting down for a cozy family dinner, or just whipping up a quick and satisfying lunch, this combo is really hard to beat.

Sweet potatoes aren’t just a comfort food – they are also bursting with health benefits. Packed with vitamins A and C, fiber, and antioxidants, sweet potatoes support vision health, aid digestion, and help fight inflammation, making them a stellar choice for a nutritious diet. Let’s get started!


3 large organic sweet potatoes
3 T Avocado oil
1 1/2 tsp kosher salt
1-2 tsp of your spice combo of choice (I used Garam Masala and it was amazing!)


  1. Preheat the oven to 450. Place 1 or 2 baking sheets in the preheating oven to warm up while you prepare the fries.
  2. Peel the sweet potatoes and cut them into skinny, long rectangular French fry shapes. I first cut ends of each potato off and then cut in half lengthwise. If your potatoes are long, like mine were, cut them in half crosswise as well.
  3. Toss the fries with the oil – mix well with your hands to combine. Sprinkle the salt and spices on top and mix again to coat each of the fries.
  4. Spread across 1-2 baking sheets – you want there to be room between the fries. I needed two baking sheets. Don’t burn your hands!
  5. Bake for 10 minutes. Rotate each of the fries with tongs, and then put back in to bake for another 10 minutes. At this point, start paying attention for how brown you want the fries to be – you want them slightly browned, but not burnt. They will burn quickly, so check them every few minutes until they are as crispy as you’d like.
  6. Allow the fries to slightly cool on top of the oven, and sprinkle with a little bit of salt.

Aioli Ingredients

1/2 cup of vegan mayo (I love Primal Kitchen’s!)
2 garlic cloves
3/4 T fresh lemon juice
1/2 tsp Herbamare or sea salt

Aioli Directions

  1. Prepare a garlic paste by finely mincing the two garlic gloves and sprinkling with a pinch of salt. Using your knife, gather the garlic into a pile and drag the sharp side of the blade across the garlic (pressing and flattening the minced pieces). Work the garlic back into a pile and repeat for 2-3 minutes, until you have a thick paste.
  2. Combing the mayo, garlic paste, lemon juice, and sea salt in your dish of choice. Combine, and dip your fresh fries in the aioli! Enjoy.
