Fourth of July weekend and my countdown is on, do you know what you’re bringing to the party this year? Why not make it simple and refreshing, but still impress the guests with a “healthy” cucumber cooler. Cool down, rehydrate, and refresh throughout the day with this blend of fresh lime, fresh mint (I’ve been getting mine fresh from the farmer’s market and it’s fragant and potent!), organic cucumber, and ice. If you’re looking to have a low sugar cocktail or two, try this with your favorite libation added in.
Minty Cucumber Cooler
Ingredients:
1 small/medium persian cucumber, rinsed and chopped
1 handful fresh mint, cleaned and chopped
Juice and zest of 2 limes
handful of ice
3-4 drops stevia (optional)
Directions:
Add ingredients to blender, blend until smooth.
