Crunchy Chopped Salad with 3-Ingredient Hummus Dressing

This quick & easy chopped salad makes for the perfect lunch on the go. You can throw whatever you want in it, though I did include some guidelines below ;) Feel free to use whichever type of lettuce is your favorite – mine’s romaine!


1 English cucumber, diced
2 heads of romaine, stemmed and chopped
1 head of diced fennel
2 red, yellow, or orange peppers, diced
4 thinly sliced green onions
1 cup of cherry tomatoes, diced
3/4 cup of toasted pumpkin seeds
3/4 cup of broken-up feta cheese – my favorite is the Violife vegan feta!

Creamy Hummus Dressing

1/2 cup hummus
1/4 cup olive oil
Juice from 1/2 a lemon
1/4 tsp Kosher salt


  1. If your hummus is very smooth and drippy, it will mix together perfectly in a mixing bowl. If it’s thicker, you might want to use a high-speed blender.
  2. Combine the dressing ingredients and blend until they’re smooth
  3. In a large serving bowl, combine all of the salad ingredients. Pour the dressing over the salad and mix well.
  4. Enjoy!
