Purple Sweet Potato Bites

This simple appetizer was a huge hit in my house! Not only are these sweet potato bites easy to make, but they are so colorful and loaded with powerful nutrients. Purple sweet potatoes are packed with antioxidants (if you couldn’t already tell from their color!) like selenium, tyrosine, and vitamin C. They’re also great for your gut health because of the fiber and phytonutrients. The cream cheese topping incorporates dill, another powerful food. Dill promotes digestion, boosts your immunity, and can even help with insomnia. Add some color to your next meal with these delicious sweet potato bites!

Ingredients

1 purple sweet potato
2 T vegan cream cheese (I love Monty’s vegan cream cheese)
1 T fresh dill, chopped
5 sun-dried tomatoes, chopped
1/3 cup of walnuts, chopped
10 leaves of fresh basil, chopped
salt & olive oil to taste

Directions

  1. Slice and bake the sweet potato rounds for 25-30 minutes or until cooked/toasted. Drizzle with a little oil to avoid drying them out in the oven.
  2. In a small bowl, combine the cream cheese with the dill.
  3. In another bowl, combine the sun-dried tomatoes, walnuts, and basil and season the mixture with salt, pepper, and olive oil.
  4. Spread the cream cheese mixture on top of each sweet potato slice and top it with the other mixture
  5. Serve and enjoy!
