You’ve gotta try this spicy bean bowl boosted with gochujang paste. Gochujang has tons of benefits, and it’s delicious! For starters, it’s fermented, so your gut will love it. Ingredients
1 can of white beans drained and washed
1 large shallot minced
1 garlic clove minced
2 T olive oil
1 T gochujang paste
2 tsp tomato paste
1 tsp light miso paste
1 tsp sesame oil
Tamari to taste
Lime juice to taste
Directions
- Sautée the onion and garlic in olive oil
- Add the gochujang, tomato, and miso paste
- Deglaze with some water and then add Tamari and sesame oil
- Add the lime juice, and stir in the beans
- Allow the beans to simmer in the sauce for 3-5 minutes
- Serve over rice with kimchi, diced cucumber, green onions, and sesame seeds
