Fresh & Easy Forbidden Rice Salad

With my family’s lack of sleep this week, David with his snoring and Sammy coughing for days, I decided to load everyone up with a melatonin rich dinner last night, to ensure we all had the best chance of getting a good night’s sleep, and give us each a must needed boost to our immune systems.

I paired melatonin rich ingredients of black forbidden rice, walnuts, tomatoes, and corn with green onion and sugar snap peas. Tie everything together with my basic lemon vinaigrette and you have an easy to make, but complex tasting springtime dish!

It is important to note that my ingredients are organic, and corn is one of the most genetically modified foods out there, so if you can’t find organic (non GMO) corn at your grocer, or farmer’s market, leave this ingredient out. It’s not worth the risk!

Black Forbidden Rice – Supplies natural melatonin, high in iron, contains the highest amounts of protein of all rice, and double the fiber of brown rice

Walnuts – Natural source of melatonin, anti-inflammatory, anti-oxidant, unusually high in vitamin e, preventing cancers and keeping our hearts healthy

Sugar Snap Peas – Boosts immune system, strengthen the heart, keeps bones strong

Corn – high in cancer fighting anti-oxidants, great for hair and eyes, high in folate and melatonin

 

Fresh & Easy Forbidden Rice Salad

Serves 4

Ingredients

2 cups black forbidden rice, steamed and chilled

¾ cup, organic sugar snap peas, blanched, sliced, and chilled

1 handful, organic cherry tomatoes cut in halves

1 large cob organic corn, blanched and chilled, cut off the cob

½ cup organic, raw walnuts

¼ cup green onion, whites only, thinly sliced

Dressing:

Juice of 2 fresh squeezed lemons

¼ cup organic olive oil

1 clove garlic, fresh pressed

1 T raw local honey

½ tsp. salt

½ tsp. pepper

Combine all ingredients, shake vigorously

Directions:

Prepare ingredients as indicated. Toss half portion of the dressing with rice, toss in ingredients and mix throughout, saving some ingredients for presentation. Garnish top of salad with remaining ingredients and drizzle other half of dressing over top of salad, serve chilled
