Bowls are big this year, in fact, they made many lists for top wellness trends in 2016 and they aren’t slowing down. A meal in a bowl, sounds so simple and is one of my favorite ways to really fill a bowl with nutrient dense ingredients. When everything comes together just right, the flavors are unforgettable. This Glow Bowl was created to coincide with a luncheon I spoke at, we wanted to create a vibrant bowl that would have our guests glowing from the inside out. The ingredients are energy boosting, adrenal supportive, and super good for your hair, skin and nails.
I like to make ahead for an easy lunch or dinner bowl, they keep in the fridge very well, especially if you hold the dressing on the side.
Glow Bowls
Serves 1
Ingredients:
½ cup organic sweet corn, fresh cut off the cob
½ cup roasted golden and regular beets (roasted, peeled, chilled)
½ cup fresh sugar snap peas, mandolined
1 T. toasted sunflower seeds
½ cup cooked black quinoa
¼ avocado
Large handful of sweet pea shoots and Mache greens (or mixed greens of your choice)
Build bowls around the mixed greens
Dressing:
1 shallot, peeled and chopped
zest & juice of 1 orange
zest & juice of 1 lemon
1/3 cup olive oil
1 T. fresh thyme
pinch sea salt and pepper
Add all ingredients to blender and blend until smooth
