Carrot Cashew Pate

Enjoy this paté in wraps with shredded vegetables, put a scoop on salads, or serve as a dip with your favorite crudités. I recommend it because it is rich with anti-oxidants that will brighten your skin, contribute to your over-all well being, encourage a quick metabolism, and aid weight loss.  It’s also super tasty!  How can such a simple spread do all of that?  Though you can get a lot of nutrition out of cooked foods, a raw spread like this will add enzymes to your body, enhancing your digestive system and energy level.  It is also a properly combined food, so you won’t get stuck in your intestines.  Instead, you will metabolize the nutrients quickly and efficiently, and it won’t put weight on you.  When you add a spread like this to your diet,  you actually promote weight loss because your body takes everything it needs from the foods very easily and doesn’t need to keep the excess waste in the body.  Plus the recipe is made with some of the best foods for taste and nutrition.

Carrots are a crunchy, sweet, aromatic root veggie and when consumed will drench your system with vitamins and minerals.  That’s no exageration; carrots contain over 600% of your daily Vitamin A needs and a whopping percent of Vitamins C, B1, B3, and B6, and minerals folate, potasium, and magnesium.  These vitamins and minerals replenish your depleted cells and nourish them for the long run.  Vitamin A plays a vital role in supporting healthy vision, skin, and gene transcription.  Vitamin C supports your skin and your immune system.  The B Vitamins are essential to stress management, and minerals folate, potasium, and magnesium help healthy blood, muscle function, and bone strength.

This recipe utilizes one of my favorite foods: cashews.  Cashews are a low fat nut that are great for your heart health. Approximately 75% of the fat in cashews is unsaturated fatty acids that promote health in people with diabetes.  The copper and magnesium in cashews will strengthen your skin elasticity and your bone density.  These minerals will also help with migrane headaches, muscle cramps, soreness, and fatigue.  Lastly, cashew will keep your tummy satisfied and your waistline slim! Feeling full and nourished will help keep your portions small and in a recent study it was found that people who eat nuts at least twice a week are much less likely to gain weight than those who almost never eat nuts.  So let go of your concern,  target weight is closer than you think with this recipe.

The lemon juice, ginger, tamari, and parsley used in this recipe contribute to a mellow, savory taste.  They are also equally rich, healthy and supportive foods.  I cant say enough about this uber decadent recipe.

Carrot Cashew Paté

Prep and Cook Time: 10 minutes

Ingredients:

  • 2 medium carrots, chopped
  • 1 cup cashews
  • 2 tsp fresh ginger, chopped
  • 5 tsp fresh lemon juice
  • 2 tsp tamari (soy sauce)
  • 4 tsp extra virgin olive oil
  • sea salt to taste
  • 2 tsp chopped parsley or cilantro

Directions:

  1. Blend all ingredients except the cilantro or parsley in a blender until a smooth paste forms, scraping down the sides periodically.
  2. Add the ciliantro or parsley and pulse to mix it in.

Serves 6
