If you are like me and my family right now, you are trying to use everything in your pantry and refrigerator to minimize trips to the grocery store. I was rummaging through my kitchen over the weekend and saw lots of greens: avocado, cilantro, parsley, jalapeño, and limes and was curious about what kind of dipping sauce I might be able to create for the celery and carrots I was snacking on.
I reached for my computer and started Googling and, wow, did I find the tastiest recipe. With just a few additional ingredients (garlic and pistachios) and in just five minutes, I was able to make what Pinch of Yum refers to as a “5-Minute Magic Green Sauce!” My family and I quickly learned that this sauce goes with everything: veggies, lentil chips, crackers and even as a spread on a sandwich.
INGREDIENTS
- 1 avocado
- 1 cup packed parsley and cilantro leaves (combined)
- 1 jalapeño, ribs and seeds removed
- 2 cloves garlic
- juice of one lime (or two – get lots of limey goodness in there!)
- 1/2 cup water
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/2 cup pistachios
INSTRUCTIONS
Pulse all ingredients – except pistachios – in a food processor until incorporated.
Add pistachios and pulse until mostly smooth (depends on what consistency you want).
Serve as a dip, spread, or sauce — or add additional water or oil to thin the sauce for use as a dressing or a marinade.
