Do you know when two ingredients taste so delicious together that it feels as if they were made for each other? That’s how I feel about peanut butter and dates. The earthy flavor of the peanut butter combined with the sweet notes in the dates is my ideal combination. That’s probably why I am so addicted to these Peanut Butter Date Cookies. They are the perfect snack because they’re super satiating and satisfy any sweet tooth and are a much healthier alternative to other cookies. These little desserts are sweetened with dates and contain a solid amount of dietary fiber due to the flax meal and dates. I hope you enjoy them!
Ingredients:
2/3 cup medjool dates, pitted
2/3 cup creamy peanut butter
2 tsp ground flax meal
1/2 tsp baking soda
1/2 tsp vanilla extract
flaked sea salt
Directions:
Start by pre-heating the over to 350 degrees and line a baking sheet with parchment paper then set aside.
In the base of the food processor add the dates and pulse together into a sticky dough forms. Add the peanut butter, flax meal, baking soda, and vanilla extract then pulse to combine.
Once the mixture is sticky using a 2 tablespoon scoop to remove the dough. Scoop into a ball then place onto the baking sheet.
Using the tines of a fork, press down onto the cookies to make a hashtag pattern. Sprinkle with flaked sea salt and bake for 10 minutes.
Remove from the oven and let cool completely. Enjoy!
