Super Charged Pumpkin Latte

Tis the season for the pumpkin spice beverage of choice.  It’s that time of year when I add a little pumpkin into my morning routine.  Instead of my usual Matcha Latte, today I got into the spirit of Autumn with this  “Super Charged” Pumpkin Latte.  Yes, I have a coffee on occassion – no judgement please.  I add a strong shot of espresso to this along with XCT or coconut oil.  XCT oil is a medium chain triglyceride and major metabolism booster – adding this is a great way to get a no crash energy boost.  Fresh pumpkin and natural sweetener with pumpkin pie spice make this a divine drink any time of day (just not too late in the day or leave out the coffee and have it caffeine free).

Super Charged Pumpkin Latte

Makes 1-12 ounce drink 

Ingredients:

½ cup almond milk

½ cup So Delicious Culinary Coconut Milk

2 T. pumpkin puree

1 T. Bulletproof XCT oil or coconut oil

1 shot espresso or 1/3 cup strong brewed coffee

¼ tsp. “pumpkin pie” spice (or mix of cinnamon, nutmeg, cloves)

4-5 drops vanilla stevia or 1 T. maple syrup

*sprinkle extra cinnamon on top

Directions:

Add ingredients to Vitamix or blender. Cover with lid, blend until smooth. Heat on stove or in microwave.
