Avocado toast has made its mark and is here to stay, but the mere idea has spawned even more toast innovations. I’m not mad at any movement that encourages us to eat more veggies, so the sweet potato toast trend is right up my alley. Now, my disclaimer here is, this obviously isn’t going to to taste like toast đ but, you can toast your sweet potato slices and treat it with toppings as you would toast and you might find that the combination of flavors actually tastes better than plain old toast! You can even make your avocado toast and your sweet potato toasts mesh into one. Here are a few ideas to take this new spin on toast and mix it up.
Sweet Potato âToastsâ
- Scrub a sweet potato clean (you can leave the skin on!) and cut lengthwise into 1/4-inch slices. (This works best if you start by lobbing off part of the side to make a level surface, then placing the flat side down on the cutting board.)
- Pierce each slice with a fork to help steam escape and improve the texture.
- Par-cook in the microwave for 3 minutes, flipping halfway through. Or, bake in the oven on 450 degrees for 15 minutes (turning once)
- Toast on the highest setting of your toaster until tender when pierced with a fork. To “toast” the slices, you can pop them into the slots of a standard toaster or set them up in a toaster oven. Either way, crank it up to the highest setting and keep toasting until
- Toppings are limitless, but here are 3 of my favorites…
- Sweet Potato Toasts with Sauteed Leeks and Roasted Radish:
- Prepare desired quantity of your sweet potato slices (see above)
- Mix approx. 2 T. of Kite Hill Almond Ricotta Cheese per toast (sautée 2 cloves crushed garlic and 1 tsp. chopped rosemary in olive oil with a pinch of salt, then folded into 1 cup of the ricotta cheese)
- Sautée sliced leeks in olive oil with a pinch of sea salt until softened
- Roast radish, lay on a parchment lined baking sheet with a drizzle of olive oil and pinch of sea salt. Roasted on 400 degrees approx. 10-12 minutes
- Layer your toasted sweet potatoes first with 2 T. Kite Hill Ricotta cheese blend, then 2 spoonfuls leeks, then finish with 4-5 roasted radish slices.
- Avocado Sweet Potato Toasts with Black Beans & Pico de GalloÂ
- Prepare desired quantity of your sweet potato slices (see above)
- Mash 1 avocado with juice of 1 lime
- Then fold in 1 pressed clove garlic, 1/4 cup diced tomatoes, finely chopped red onions, 1/4 cup drained & cooked black beans with a pinch of cumin and sea salt. Â Adjust seasoning to taste
- Spread avocado mix over sweet potato toast, then garnish with fresh chopped cilantro and toasted pumpkin seeds
- Banana, Almond Butter & Sweet Potato ToastsÂ
- Prepare desired quantity of your sweet potato slices (see above)
- Mix almond butter with cinnamon to taste
- Spread almond butter on sweet potato toasts, Â then top with banana slices
- Sprinkle with additional cinnamon and garnish with your choice of toasted almond or coconut
- Sweet Potato Toasts with Sauteed Leeks and Roasted Radish:
