I have been making this salad recipe lately that calls for a few ounces of silken tofu. In a quest to not let the other ounces that come in the package go to waste, I decided to attempt this chocolate pudding. It was unbelievably easy and with only five ingredients (one being water! ) I was honestly a bit skeptical about how well it would turn out. Well let me tell you, it was heavenly! It was rich and indulgent without being heavy and really is the perfect summer dessert. I topped mine with fresh raspberries and blueberries and licked the bowl clean! This is a great replacement for any packaged pudding you might buy, which is usually packed with trans fats, unnatural and processed ingredients and tons of sugar. Plus, tofu is packed with antioxidants, protein, calcium, fiber, iron, selenium and Omega 3s.
I am always excited to find a new healthy dessert recipe that my kids will love as much as I do and this one really blew my expectations out of the water. I hope you love it as much as I do!
Serves 4
Ingredients:
5 ozs. organic Hu dark chocolate
6 ozs. organic firm silken tofu
3 T Lakanto Monkfruit sugar
¼ cup water
3 cups of organic fresh berries
Directions:
Melt chocolate and sugar in a pan over medium heat, stirring and watching constantly, until it’s just melted & creamy.
Place tofu, water, and chocolate-sugar mix into a blender and blend until smooth.
Move into a bowl and let chill in the refrigerator for an hour.
Garnish with berries and serve!
