You’ve probably had miso ramen. And I’m sure you’ve tried tahini. But have you ever had Tahini & Miso Ramen?! If not, buckle up because you’re about to experience a flavor journey. The combination of miso and tahini flavors creates the perfect umami taste. This mouth-watering noodle soup dish is loaded with veggies like carrots, peppers, shiitake mushrooms, onion, and more. Ingredients:
1 T tahini
1 tsp miso
1 tsp Lakanto brown sugar
1 1/2 tsp tamari
Pinch of chili powder
1/2 garlic clove, minced
1/2 in of ginger, grated
1-2 cups veg stock
1 package of Lotus Foods rice noodlesÂ
1/2 shallot, dicedÂ
1/2 carrot, julienned
1/2 pepper, julienned
Mushroom Jam
1 small basket of shiitake mushrooms
1 garlic clove, minced
1 inch of ginger, minced
1/2 spring onion, chopped
1/4 cup tamari
1 T brown sugar
1 T rice vinegar
1/4 cup toasted sesame seeds
Directions:
Start by mincing your ginger and garlic then mix them with your tahini, miso, brown sugar, tamari and chili powder. Set the mixture aside and start making your mushroom jam.
Chop your mushrooms then fry them until golden brown add in the minced garlic, ginger, and spring onion. Fry the mushroom jam mixture a little more and then slowly add in the tamari, brown sugar and rice vinegar. Once the mixture is fully cooked, set aside.
Start assembling your broth by mixing together your tahini miso flavored base with the vegetable stock and boil until hot. Add in your already cooked noodles.
Top the ramen with carrots, bell peppers, scallion, sesame seeds, and the mushroom jam. Enjoy!
