Introducing one of the most popular soups from my delivered S.O.U.P. Cleanse! Posole is actually another name for hominy, which is a corn product that is sold in whole and ground form. Contrary to popular belief, hominy is actually one of the most nutritious corn products out there. Hominy is high in fiber, plant-based protein, and omega-6 fatty acids, and is rich in minerals such as iron, magnesium. phosphorus, zinc, manganese, and selenium.
This Vegan Verde Posole Soup is hearty and boasts delicious umami notes. The traditional Mexican soup is typically made with chicken, but this dish is fully plant-based using beans instead. It has been a home run for my cleansers and I cannot wait for you to try it!

Servings: 4-6
Ingredients:
1 onion, diced
1 T garlic
1 T Mexican oregano
1 T cumin seed
1 T coriander seed
2 T chili powder
28 oz. can organic hominy
10 oz. can organic pinto beans
1 lb. tomatillos
1 qt. organic organic vegetable broth
Directions:
Remove skin from tomatillos and rinse well. Cut tomatillos into quarters.
Toast Mexican oregano, cumin seeds, coriander seeds, chili powder in a pan over medium heat until aromatic and lightly smoking. Transfer to a spice grinder and blend.
In a soup pan, heat olive oil and then addonions and some salt. Sweat onions until they are translucent. Add the garlic and sweat until aromatic then add the vegetable broth tomatillos and hominy. Stir in the spices and whisk until fully incorporated making sure none stick to the bottom of the pan. Simmer for 45 minutes Then add the pinto beans and simmer for an additional 5 minutes. Season with salt and pepper to taste.
