Holy cow, you guys, this is one of the best recipes I have tasted in a long time. And I bet when you first saw the image, you had no idea there were actually NO cows involved in the making of this feta-based dish. That’s right; this whipped feta is entirely vegan. You know I love texture, and there is nothing but texture in this dish. Creamy whipped feta, crunchy pistachios, and tender beets come together to create this masterpiece. And if you haven’t tried Violife’s vegan feta yet, you are in for a real treat.
3 large or 5 small beets
1/4 cup chopped, toasted garlic pistachios
1/2 cup fresh chopped dill, cilantro, parsley and mint
4 T organic olive oil
Juice of 1/2 lemon
Flaked sea salt
Fresh cracked black pepper
1 package Violife Vegan Feta
1/4 cup Kite Hill Sour Cream
Whipped Feta: Cube feta and microwave for 20 seconds on high. Add sour cream, 1 T olive oil, salt and pepper. Whisk until well combined.
Roast beets with olive oil and salt for 375 degrees for 35 to 40 minutes until tender. In a bowl, toss roasted beets with lemon juice, olive oil and herbs.
Serve beets on top of whipped feta and top with garlic pistachios, salt & pepper to taste
