Edamame Salad with Green Goddess Dressing

At its core, this salad champions the nutritional powerhouse that is edamame, boasting a wealth of protein, fiber, and essential vitamins and minerals. Salad Ingredients

2 cups shelled edamame, cooked and cooled
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1 cup shredded carrots
1/2 red onion, finely chopped
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1 cup thinly sliced sugar snap peas
1 cup shredded red cabbage
1 cup baby spinach leaves

EG Kitchen Green Goddess Dressing Ingredients

1 cup hemp seeds
½ cup water
4 T olive oil
4 T lemon juice
2 T ACV
1 garlic clove
1 tsp salt
2 T nutritional yeast
1 cup fresh parsley

Dressing Directions:

Blend all the ingredients together and then slowly add in the olive oil and lemon juice.

Salad Directions

  1. In a large bowl, combine the shelled edamame, cherry tomatoes, cucumber, red bell pepper, shredded carrots, red onion, cilantro, mint, sugar snap peas, red cabbage, and baby spinach.
  2. In a small bowl, whisk together the dressing ingredients: soy sauce, rice vinegar, sesame oil, maple syrup, grated ginger, and minced garlic.
  3. Pour the dressing over the salad and toss until all the ingredients are well coated.
  4. Refrigerate the salad for about 30 minutes to let the flavors meld.
  5. Before serving, give it a final toss and adjust the seasoning if needed.
