When I heard the term salad “booster” I had to know more. I like a boost in my bone broth in the form of ginger or turmeric juice, a boost in my juices by adding flax and chia, why not a flavorful seaweed boost on my favorite food…salad!
This booster blends seaweed, sprouted seeds, and nutrient dense ingredients for a flavor and wellness bonus that’s not just for salads. I’ve used it on vegetables, rice bowls, and stir-fries. Use the base recipe below and build off of it. You could use any seed you like, dried herbs, and any zest you choose.
Nori Salad Booster
Makes about 2/3 cup
Ingredients:
2 sheets nori seaweed, torn into pieces
2 oz kale chips – (I used Alive & Radiant brand or you can make your own with this recipe)
1/4 cup sunflower seeds
2 T. hemp seeds
zest of one lemon
1/4 tsp. cayenne powder
1/4 tsp. Herbamare seasoning (Whole Foods)
Optional Add-Ins:
1/4 tsp. sansho pepper (optional)
1 T. nutritional yeast
sea salt to taste
dried herbs of your choice
bee, oregano, or fennel pollen
Directions:
Heat the oven to 300 degrees with racks in the top third. Arrange the torn nori, sunflower seeds, hemp seeds, and lemon zest on a parchment lined sheet pan and place on the top rack. Bake in the oven until everything is nicely toasted (approx. 15-20 minutes, keeping a close eye as to toast and not burn).
Let all the ingredients cool and crisp, then toss the nori, sunflower seeds, hemp seeds, and lemon with the cayenne and Herbamare.
Add this blend to a food processor with the kale chips and pulse. Add in the optional ingredients at this time if you’re using. Pulse until the seeds are broken up, but booster still has texture.
Store in cool dry place.
