I’m constantly trying to change things up here, this is an evolving kitchen. Taking familiar recipes and making them healthier, more interesting, and more delicious is the key for me! I’ve taken a basic recipe for pesto and nutritionally super-charged it with pistachio. This is an easy way to make a simple dish stand out.

1 1/2 cups fresh basil, chopped
1/2 cup cilantro, chopped
1 cup, shelled raw pistachio
2 cloves garlic
1/4 cup organic olive oil
juice of one lemon
Pinch of sea salt and cracked pepper
Place all ingredients in a food processor or blender, and pulse until smooth. Add additional salt or pepper if desired.
Pistachio Pesto is a delicious dip, spread, or topping for raw veggies, baked potatoes, steamed asparagus, rice pasta or crackers, and even as a flavor layer in my veggie lasagna.
