I’m a fan of soup in any form, so naturally this creamy avocado and coconut version stood out to me when it came time to test new soup recipes. You’ll find that it doesn’t need much, I encourage adding fresh herbs of your choice and experimenting with flavors. I added a touch of raw shallot and lime juice for complexity, and how you garnish it will make all the difference in creating a beautiful, standout bowl of soup so get creative!
Ingredients:
2 small avocado, pitted with meat scooped out
1 cup chilled coconut milk
1 cup chilled coconut water (plus additional)
1 shallot, minced
1 T. lime juice
pinch sea salt & fresh cracked black pepper
fresh herbs garnish: parsley, chives, cilantro, mint
other garnish options: radish, cucumber, corn, pomegranate
Directions:
Add all ingredients to blender, puree until smooth. Depending on the consistency you prefer, thin out your version with additional coconut water if desired. My finished soup was a bit thick, but make it how you like it.
