Heart Healthy Granola

If it’s possible to be truly in love with a food, I am truly in love with this granola. I make a fresh batch every week and it barely makes it to the end of the week.

I used to buy a super yummy gluten-free granola from a local place that shall remain nameless but their granola was loaded with sugar. Mmm, perhaps that’s why I felt addicted to it? I decided to attempt my own


3 cups organic old-fashioned gluten-free oats

1 1/2 cup nuts and seeds (1 cup walnuts 1/2 cup sunflower seeds)

¼ cup unsulfured shredded coconut

1/2 tsp cinnamon

1 tsp sea salt

1/2 cup maple syrup or honey

1/2 cup melted coconut oil

1 tsp pure vanilla extract

2/3 cup unsweetened and unsulfured dried fruit (goji berries, cranberries, blueberries, dates)


Preheat oven to 350 degrees.

Put oats, coconut, cinnamon, salt, nuts and seeds in a large bowl. Pour coconut oil, maple syrup, vanilla extract over the ingredients and mix to coat evenly. Spread mixture onto a half sheet pan with parchment paper. Put in the oven for a total of 25 minutes minutes, stirring after 12 minutes. Since ovens may vary and granola can burn very easily, check often. Once evenly brown remove from oven and let cool completely for 45 minutes.  Enjoy!

*Note: to make a crunchier, clumpier granola, you can stir halfway and then gently press down on the granola with the back of a spatula
