It’s pumpkin season and if you love pumpkin like I do, an easy pumpkin protein smoothie for breakfast is the perfect start to a fall day! Pumpkin is low in sugar, high in fiber and guilt free :). It’s loaded with phytonutrients to help prevent the risk of cancers! Its antioxidants, vitamins & minerals help with anti-aging, weight loss, reducing cholesterol and building your immune system.
I start with a pumpkin base, then build flavor with banana, nut milk, and spices (a blend of nutmeg, clove, cinnamon is perfect). Simply add a scoop of hemp or chia seeds to boost the protein or if you have a favorite plant based vanilla protein powder, this would easily adapt into the recipe.
Serves 2
Ingredients:
1 cup pumpkin, pureed (I buy frozen pumpkin in freezer section of Whole Foods and puree)
1 large frozen banana
1 cup organic coconut milk
1 T raw honey
1 tsp. pumpkin pie spice
1/2 tsp. vanilla extract
1 T organic hemp hearts
1 T organic chia seeds
Directions:
Combine all ingredients in a blender and blend until smooth. Drink and Enjoy!
