Vegan Chia Seed Pudding

I don’t know who needs to hear this right now, but you do not need to eat the same boring breakfast every day! This Vegan Chia Seed Pudding is just one option that you can mix into your breakfast repertoire. The cinnamon and vanilla provide the perfect flavor, and dates make it just the right sweetness level. Oh, and the almond butter is key for me.

Chia seeds contain 11 grams of dietary fiber per ounce – the equivalent of about half of the daily recommended amount for women (and one-third amount for men). Adding chia seeds into your diet can help balance your blood sugar levels, lower cholesterol, improve digestion, and aid in weight loss.

Ingredients:

¼ cup chia seeds
1 tablespoons almond butter
1 + ¼ cup spring water
¼ teaspoon cinnamon
¼ teaspoon vanilla extract
3 pitted dates
dash of sea salt

Directions:

Warm the water.

Blend all ingredients with the water except for the chia seeds into a smooth milk in a blender.

Put the chia seeds into a bowl and pour this mixture on top and mix well by hand.

Cover and refrigerate to create gelatinous mixture.

Serve with berries.
