Vegan “Sausage”, Mushroom & Arugula Pizza

This one is a little different than my usual recipe post, but in the spirit of covering a little bit of everything, I’m sharing a pizza recipe that is family approved, but also happens to be vegan. We’re a family of food lovers and pizza is never off the table, but I love knowing I can make a meatless and dairy free version at home that everyone will enjoy. This one is an easy make during a busy holiday season or when you need a quick and easy dinner for your health conscious guests (or use it as an opportunity to introduce the meatlovers in your life to an alternative!). Inspiration for this recipe is from my friend and one of my favorite vegan chefs, Anne Thornton.

Vegan “Sausage” & Mushroom Pizza

Makes 1 – 12 inch pizza

Ingredients:
12″ gluten free (optional) pizza crust
1/2 cup organic pizza sauce or tomato sauce
1/2 cup Kite Hill Almond Ricotta, crumbled
4 ounces Miyoko’s Vegan Mozzarella, sliced thin
2 Beyond Meat Spicy Italian Sausages, cases removed, broken down into crumbles
1 cup sliced cremini or button mushrooms
1 tsp. dried oregano
large handful arugula
drizzle of olive oil
pinch sea salt (to season arugula and pizza)

Directions:

Preheat oven to 425 degrees. Toss or roll your pizza dough (gluten-free optional) and place on a piece of parchment paper on pizza pan or baking sheet. Use a brush or your fingers to pat olive oil around the edges of the dough. Then add 1/2 cup sauce and spread out, leaving about 1/2 inch boarder for the crust. 
Break the sausage out of the casing and break apart with fingers into small crumbles. Sprinkle sausage crumbles generously over top of the sauce along with the mushroom slices, crumbles of Kite Hill and evenly space out the vegan mozzarella over top. Finish with a sprinkle of sea salt, and dusting of oregano. Place into pre-heated oven.
While pizza bakes, toss arugula with a drizzle of olive oil and pinch of sea salt, set aside.
Check pizza after 10-12 minutes. Baking time will vary, but should take approx. 12-18 minutes, depending on your oven. When crust is golden and cooked throughout, remove pizza from oven, top with seasoned arugula. Slice and serve warm.
